The Flossmoor Brewery Tour

The joyous process of brewing handcrafted beers begins as our Brewmaster selects a unique combination of pale malts and specialty grains that creates each of our unique styles of beer.

1.) The selected grains are milled into a grist and carefully mixed with a hot water in our gleaming copper mashPhoto of Brewery tun to create a thick mash. The mash is cooked in the mash tun for one to three hours while the grains' complex starches are converted to fermentable sugars. The sweet mash is then filtered and separated from the spent grain in the lauter tun to create a clear sweet liquid called a wort (pronounced "wert").

2.) The wort is then filtered and pumped into our beautiful copper brew kettle. There the wort is brought to a rolling boil and, at various stages of the boil, a variety of carefully selected hops are added. Hops are the spice of beer, adding both aroma and bitterness to complement the sweet flavors of the malt.

3.) The hot hopped wort is then pumped from the brew kettle through the heat exchanger (to reduce the temperature of the wort) into one of our four fermentation vessels, where brewer's yeast is added and the wonderful fermentation begins. In the fermenter the temperature of the fermenting wort is closely controlled to allow the brewer's yeast to work its magic: the transformation of sugars in the wort into alcohol and carbon dioxide. Fermentation is completed in about five days, and then our beers are allowed to naturally carbonate and condition for at least two weeks to develop their smooth and rich taste.

4.) After about three weeks of fermentation and cold conditioning, our handcrafted beers are then lightly filtered (to remove any remaining yeast) and pumped into one of the eight stainless steel serving tanks in our cold storage room.

5.) From the sealed serving tanks our handcrafted beers are pumped directly to our beer taps and into the glasses of our thirsty beer lovers. At this point our custom-brewed beers are at the height of freshness and bursting with flavor.
